Hello my name is Hui, on behalf of Expert Village I'm going to show several everyday Chinese dishes. First we would heat the wok over medium high heat and put 3 tablespoons of cooking oil. Wait until the oil becomes smoky. Then we would add the Szechuan hot bean sauce into the oil. Gently toast the hot bean sauce for 2-3 minutes. The reason doing that is we want to release the aroma from the hot bean sauce. After 2-3 minutes, we can start adding the garlic and ginger into the wok, so that all the aroma from the garlic and the ginger would also be released and dissolved into the oil. Be careful don't let the garlic and ginger burn in the oil. Control the temperature.
