Hello my name is Hui, on behalf of Expert Village. I'm going to show several everyday Chinese dishes. To prepare the Szechuan peppers we would put the pepper corns into the medium high heat wok. You don't want to put any oil and just let the Szechuan pepper toast for around 1 minute . Then drop it into a molder or like a heavy duty cast iron pan and then just gently crush the Szechuan peppers into flakes. The reason to toast the Szechuan pepper before grounding them is to really make the aroma of the Szechuan peppers release so we would get small flakes.
