Remove Pepper Seeds

Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, you better get your fire extinguishers because we're making chili diablo. Realize when you're cutting peppers, you don't want the seeds. If a few seeds get in there it's okay, but the seeds are really hot, especially on some of these peppers that I have. What you want to do is just cut off the end with your pairing knife. See how there's a turn? I like to just cut that where the turn is and just give it a slice right in the middle. Be careful that you don't cut yourself. What I'll do then is just open it up, take the back of my knife, and just pull out all the seeds. If it splits in half that's fine. You see how easy it is. Just grab it and on one end, and you'll see it scrapes out all of that stuff. Do the other side. This is what you want. Keep it on the side. Just pull that out. That's what you're going to do with all of your peppers. Again, with all of the peppers you're just going to cut off the end. Give it a slice right down the middle. Be careful not to cut yourself. Open it up and just discard, by using the back of the knife, those seeds. If you get a few in there, don't worry. It's not going to hurt. A few here or there will actually give it some spice. Again, the same thing on all of them. Cutting in half, open it up. Even stuff like this you could use your fingers on the bigger ones to help it along. Open it up. If you see there's a rough spot, just cut that off. Discard it. All you want is the nice pepper. Again, if a couple of seeds get in there, don't worry. It's always good to go from the bottom up too to get the seeds out.
