Sauté Garlic & Onion for Chili

Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, you better get your fire extinguishers because we're making chili diablo. Okay, so we got everything chopped the way we want it. We're going to take it over to our pan, and we're going to start to sauté. We're using a big nice pot. We've got our pot here. We're going to get a nice flame under it. This is one of those pots that the more you cook with, the better the stuff comes. I'm going to add about a tablespoon to 2 tablespoons of olive oil and we're going to get it hot. We're going to add our onion. That's what's great about these boards. Go right in with your onion. Don't be afraid. Just push it in with your hands if you have to. I'm going to let that sauté for about a minute and let it open up. It's been about a minute. You see there it's just getting open now. It's getting a little translucent. I'm going to add our garlic. Nice. Everyone loves garlic and onion. Smell up the whole house. Everyone would be waking up wondering what I'm cooking. I'm going to sauté that too for about a minute and lower our flame. You just want to open it up and get those flavors going. We lowered our flame here to a medium flame. We're going to add our chop meat at this point to get our chop meat brown. I use a very extra lean chop meat, so I leave all the drippings and flavor in there. I like that. I think that's the flavor, so let's add our chop meat to this pot. Lastly, we're going to get our chop meat and just put that right in there. Using today about 2 1/2 pounds of extra lean chop meat. We're going to get it all nice and brown.
