Chop Garlic & Onion for Spicy Chili

Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, you better get your fire extinguishers because we're making chili diablo. First thing we're going to do is just get a couple of cloves of garlic, 3 cloves. I'm just going to give them a little punch like so, and that will take it out of its shell. Also, you want to take out that little tip where the stem is because it's hard and you don't want it in your food. If it flies over there, you take it over there. Chop this garlic up finely by cutting one way, slicing one way like so, turning, and then slicing that way. Remember, if it's not the consistency that you want, take your blade and just chop it going back and forth lifting your shoulder up and down, or you arm up and down so the back of the blade chops up and down pushing your garlic in and out. I'm going to do the same thing with our onion. Cut one side off, cut the other side off, cut it in half, and remove the skin. Get that top layer of skin off. You want a nice amount of onion in your chili, so I'm going to stay one medium size onion should be fine or about half a cup. 3/4 of a cup. Slicing one way, same as we did with our garlic. Turn it this way and also chop. If it's not the desired consistency or size, then start to use your chopping motion. Come back. We're going to whip it all up.
