Hi, I'm Amanda with Expert Village. In this clip I'll be chopping up the mushrooms. So I have button mushrooms and cremini mushrooms here today just to add a little bit of variety of the different kinds of mushrooms. Just start by whipping the mushrooms with a damp paper towel and it's important to avoid washing the mushrooms because they absorb the water and they can tend to make the mushrooms soggy. I'll just start by whipping some of the mushrooms down here, just removing the dirt from the mushrooms. When choosing mushrooms as well, you want to make sure that the mushrooms are light in color. That indicates freshness and you want to avoid a wet or slimy wrinkle mushroom. So you want the mushrooms to be pretty nice and firm. Next I'll chop the mushrooms and just to start with a nice fresh part of the mushroom. I'm going to cut just a small end of the stem off of the mushroom as that part can be a little bit more spongy and have less flavor than the rest of the mushroom with the stem. From here I'll just chop the mushrooms and these button mushrooms have a little bit of a shorter stem so I'll just cut small piece of that off.
