Hi! I'm Louis Ortiz on behalf of Expert Village and we are back to show you the final steps to clean a fillet off of a flat fish. Now this is the bottom fillet as in the bottom of the fish which is a little bit harder to take off of the fish and we have showed you that in the previous video simply because it is a thinner fillet. It has to be handle a little bit more delicately so you get a better yield as much meat as you can from the fish. Again the top fillet and as you are looking at the fish from the top the darker colored skin actually and the eyes on both sides of the head that fillet is much thicker so it is a little bit easier to take off. So I got some radio bones that where left on here and these just kind of peel away so I'm really going to show you that on these and just go up underneath them with a knife and will pull back on these as I cut. I can of use them as a guide. Once I got those pulled back as far as I'm gonna, I'm going to go ahead and just start to remove those from the fillet as you could see here. Alright and there is still some gut left so I'm going to go ahead and shave this off and there is still some tiny little rib bones that we don't want to miss with while eating this guy. So I'm shaving on angle just so the bones will peel away and at that point I could just kind of cut that off. Again this is the bottom of the fish which has been scaled and here is the inside of the fillet and this is the middle bone was. I had radio bones going this way and radio bones going this way so use those as a guide to shave up until I hit the center bone and then I shaved around it. So that is the fillet and we will take the skin off from this guy which I have shown you in a previous video and get ready to figure out how we are going to cook him up.
