Prepare the Pepper Mixture for Ropa Vieja Cuban Stew

Hi I'm Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make Ropa Vieja which is traditional Cuban beef stew. Alright so it's been about 10 or 12 minutes and I am going to slowly remove the lid here letting the liquid run back into the vegetables and you can see that they are pretty well softened up. They are nice and mushy, nice and compliant. Our next step is to take a tomato paste, drop that in here, and you want to stir that around until it nicely coats everything as evenly as it will coat and you can turn your heat up at this point to 7 or 8 and what we are going to do is cook it with the tomato paste on it. Just let the tomato paste work its way into everything evenly for about three to five minutes just long enough to let it get in there and mesh all the flavors together. So we're going to form a nice even layer here. We are going to grab our lid and throw that on it. Keep in mind I have turned the heat up to about eight so we are going to come back in say we should be good in about three to four minutes to come back and actually add the liquid that we pulled out from the meat. So we'll call it three minutes and I'll see you in three.
