Okay now that we're done chopping the garlic and the pimentos, the fruit mixture should be boiling. So we're going to take our chicken and put it inside the fruit mixture. I'm going to move it around to try to get as much fruit flavor on it as I can. Again, the corn starch is starting to thicken it up a little bit and it's going to start to coat, and stick to the chicken. You're going to want to coat both sides. As this sauce reduces, I'll probably turn it two to three times, to make sure that the flavor of the sauce gets into the chicken. Once we have coated it, then we're going to take the entire contents of the pan, and dump it in with the beans. Depending on how long you would actually cook the chicken in the oil for, you can let this simmer here for five to ten minutes to ensure that it's cooked all the way through or you can cook it with the beans later, for a longer time.
