While the chicken is cooking, we're going to prepare the beans. We're going to take one of the larger pots, and we're going to dump the beans in. We're going to start cooking the beans this early because; though generally the beans are precooked, they're going to be a little bit tough, so you want to have a chance to break them up as you're cooking. We're going to be smashing them along the sides; as well, and that will act as a thickening agent, because we're adding vegetable stock, rum, and orange juice. This can become quite soupy, and smashing them with the beans will definitely help. We're going to use the spoon that we used with the vegetable stock; earlier. We're going to be adding that vegetable stock You can smash them down along the sides, or right against the bottom of the pot. We are going to be cutting pimentos, and chopping garlic later, and adding that to the beans. If you cannot find pimentos, then roasted red peppers will work just as well.
