Turning Chicken For Spicy Sweet Havana Chicken

We're about two minutes into cooking the chicken. I like to move it around so it doesn't stick. Once you start to see white along the sides of the chicken, that's when you get a feel for whether you should turn it or not; also, just by moving it. If it sticks, you can tell that it's getting closer. It's a little bit tougher to get that whiteness color with chicken thighs than it is with chicken breasts. You can see it's starting to turn along the edges; and so, pretty much, evenly cooked over the top; marked, and as you can see, earlier, I had liberally dosed this chicken with black pepper and garlic salt. Pieces of it will come off, and that's a good reason why I like to coat with spices rather liberally; because they will come off during the cooking process.
