How to Stuff Chicken With Chapatti & Sausage Stuffing

Hi, I'm Leah Schaefer on behalf of Expert Village and today, we're going to learn how to make my chicken with ciabatta and sausage stuffing and a side of dressing. Now, you'll see I pulled some of stuffing out from the big pan of dressing. Just enough to stuff these little chicken breasts. Now, if I was using some of the large ones, or if I was using maybe a whole chicken or Cornish Game hen or something, I could use a lot more. But these, little boneless, skinless breasts, you're not going to be able to get much in there. What I'm going to do is just use my kitchen shears to just snip a hole kind of, you'll see, not quite in the middle, enough so that we can get some in there. Then we'll just cut through right down the center. You'll see we're starting to get a little bit of an opening where we can put some of that stuffing. From there, you can just pull it out a little bit to make sure that you have room. One of the other reasons I pulled some of this aside is because I'm handling raw chicken. I can reach in here. This stuffing is only going to be used to go in the chicken. It's going to be cooked, so none of that is going to be contaminated. So I'm just going to put a little bit of that in there. Make sure you get some sausage, some celery, some fennel, a little bit of olives. We're going to seal it back up as well as we can and we'll coat it with the spicy bread crumb mixture. Now, the reason, honestly, that I'm using a spicy bread crumb mixture is because that's what I had on hand the day I made this up, and wasn't really sure how it was going to turn it. It turned out that it gave the chicken really good flavor. Not just the stuffing alone, there's flavor in the chicken. We will pop it on a foil lined cooking sheet. I use foil, it's a lot easier to clean up. The chicken juices aren't going to run, so you get the point. I'm just going to do that with the rest of the pieces and then I'll move on to showing you what we do when we put them in the oven. So we have the four chicken breast here, stuffed with stuffing and coated with the spicy bread crumb mixture. You can see they're evenly spaced, there's plenty of room for four on here. Now we're just going to go ahead and pop it into the oven. The oven is pre-heated to 400 degrees and we're just going to pop it in here. We'll put this on the top shelf so we can leave room for our dressing on the bottom. We will set the timer for twenty minutes.
