Heating Tips for Fudge
Hi I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make this rich espresso fudge. Okay we have our boiling mixture we are going to turn the heat down. We are going to have it on medium high heat so not quiet on a rolling boil. But we want it to be nice and hot and we are going to continuously stir it. Maybe turn it down a little bit more cause we want this mixture to thicken. We also want to get the temperature up to about a 100, I'm sorry 234 degrees Fahrenheit. That is going to be quiet, quiet hot and we up a little bit under 200 degrees right now. You can see the steam on it so we are going to get it up quiet a bit higher. You want to stir this continuously. You do not want to leave this pot at all. You are going to keep stirring. It is going to thicken up and it is probably going to take about 12 minutes to get up to this temperature. Like I said you want to keep your eye on the thermometer the entire time and you want to keep stirring it. You can see with the boiling this is getting quiet high in the pan. It is important to have a large enough pan so that it does not boil over.
