How to Prepare a Pan for Fudge
Hi, I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make this rich espresso fudge. We have gone over what we need for making the fudge. Also important is what we are going to need for cooling the fudge down and forming it. You are going to need an eight inch square pan. You can use either a metal pan or a glass one and you are going to need aluminum foil. Now what you are going to do is cover the pan in aluminum foil and you want to make sure you have a little bit of an overhang because that is going to make getting the fudge out much easier. You want to try and get it into the corners as much as possible. The smoother your foil is, the smoother the outside of your fudge is going to be. And you can see I have got the overhang on the sides, particularly the corners. I want to get that corner in there. Foil is not always the easiest thing to work with, but it becomes easier the more you do it. And of course putting it into a smaller pan is never easy either. So you just want to make sure that you are going to cover all of the surfaces because once you pour your fudge in here then it makes it much easier to pull it out using the foil. You don't have to worry about it sticking into a pan and this way you also don't have to butter the foil at all. We are just going to pour it directly into the foil and the after it has cooled it will pop out quite easily.
