Equipment Needed to Make Fudge
Hi. I'm Jennifer Cail and on behalf of Expert Village, I'm going to show you how to make this rich espresso fudge. For the equipment that you will be using to make your fudge, there are several important pieces that are key for the success. You're going to need a larger heavy bottomed sauce pan. This is going to be very important because you'll be heating up the sugar in here and cooking it and you want to make sure that it is not going to warp, that it going to maintain a steady heat and that it is large enough to not boil over. You'll also need a large bowl for mixing your fudge in and then some key pieces you'll need a candy thermometer. You don't have to have a super expensive hi tech one, you can get them for just a few dollars at the grocery store but it is important for knowing the exact temperature that you are heating your sugar mixture up to. So this is very important. You're also going to need a pastry brush. Once again you don't need an expensive one you can get them for a couple of dollars at the grocery store or you can even get them at your hardware store provided you clean them properly. This will be important when you are heating up your sugar mixture as well as brushing down the sides of the pan. You'll need a wooden spoon for beating your fudge. An assortment of measuring cups and measuring spoons and then last but not least you're going to need a double boiler, which is a pot which you are going to heat water in in the bottom and then the top part you're going to melt sugar. I'm sorry not sugar, chocolate and its important that you have this as a delicate way of heating up and melting your white chocolate which we will be using for decorative purposes at the end. If you don't have a double boiler, you can also do a make shift double boiler by having any pan which you are going to simmer water in and then using a metal bowl on top. It has to be a heat proof metal bowl, don't try to use plastic or glass and that will give you the same effect as a double boiler.
