Are the Beef Tenderloins Done?

I see our beef tenderloin is finished. I can tell that by a finger test. You just bounce it lightly up and down on the meat and you see that it gives back. It has firm pressure. That tells you it's pretty much ready. But, to make sure, I'm going to insert my handy dandy meat thermometer into the thickest part of the meat and let it read to about a hundred and twenty to a hundred and thirty, is between medium rare and rare. Rare is one twenty, medium's about one twenty five, one thirty. So, I want this to be more on the rare side. So, when this hits one twenty, I know I'm in good shape because a good cut of meat like a roasted beef tenderloin, needs to rest for about fifteen to twenty minutes to allow the juices to come out and pull back in, and that gives it that wonderful, juicy, tender flavor. So, I'm sure I can find other things to do while this rests for twenty minutes, so won't you join me?
