Washing & Cutting Cucumbers For Stuffed Baked Cucumbers

This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make stuffed cucumbers. First thing we are going to do is just give your cucumbers a good rinse under some cold water. We are not peeling these today. We are going to leave the skin on. You can peel them if you don't like the skin but you will see that the skin actually gets nice and tender in the oven. So with that said, we will go back to our cutting board. Okay back to our cutting board, here we are. First thing you do is take your nice sharp knife. What I like to do is take off the ends. Just take off the ends where the stem is because I just like to get them off. Going to cut it lengthwise; straight through and half and that is it. That is your piece. Those are going to be two stuffed pieces right here and I am going to do the same thing to the other one. Just cut off our end and cut off our other end and slice it right in half. If you see its got a bend, try to cut where the bend is. In other words, here it is bending this way. You don't want to cut it that way so that it won't be so even as far as half so cut right where the bend is. Be careful so that you don't cut yourself going straight down.
