Chopping Shallots For Veal Marsala

Hi, this is Rich Buccola here in New York City and on behalf of Expert Village I am going to show you how to make Veal Marsala. Alright we are back with our shallot one large shallot and I broke it in half and very similar to the way you would cut an onion. Remember always keeping your finger tips in from the knuckle so that you don't cut yourself as you are chopping. Just cut off the end like you would any ordinary onion. Cut off the other end and then we are going to peel back this top layer of skin like so. There is our shallot. Just push the skin to the side. And to cut it we are going to cut it real fine, chop it real small. Cut this way with the lines of the shallot and then we will turn it this way. We are going to make nice cuts and don't worry if it is still to big or too course and chop I am going to get rid of that because I don't like that skin. Then what you are going to do is just put all your pieces in working back and forth lifting the back of the knife keeping the tip on the board and just chopping to the desired consistency and the size of the shallot. I like it chopped real small you chop it up real small if you like. Come back we are going to start showing you how to chop up that garlic. Veal Marsala here on Expert Village.
