Broccoli is a wonderful vegetable. You can buy either just the crowns or save a little money and get the stem on it. It's about the same price once you feel how heavy the base is versus the crowns. But here's a quick and easy way to get you broccoli cut in beautiful pieces for either salads or to make soups out of it or what not. You just want to release the crown from the stem and you're going to work in each new grouping separately. So just kind of pull it apart or you can give it another cut. Like this and they'll start coming apart in little clumpettes. Now this normally discarded piece of the broccoli is actually delicious in soups. You cut them smaller and throw them in say a chicken soup or vegetable soup. They have lots of nutrients and lots of flavor too. They take on whatever flavor that you're going to cook them with. So I'm just going to quickly show you how I cut those. Just cut them in half and some smaller pieces that way you can add them to soups really quickly and you still get nutrients and you don't have as much waste. Back to the beautiful broccoli heads. Just going to get rid of the bases and I might cut some in half especially if I'm going to use it for crudites. I would want it about this size. If I was going to put them in a salad, I would cut them even smaller; about half. Bite size because you don't want people to take to big of a bite out of it. But this size is perfect for dipping in a crudites. This size is perfect for a bite out of a salad. Ideally, you're going to want to blanch your broccoli in a little bit of hot, boiling water. Pour it over the broccoli for just about ten seconds or so until it becomes bright and green and very soft to the touch. Not very soft but softer. Slightly softer and then dump it immediately in some cold icy water. That's going to stop it from cooking. That'll bring out the beautiful, vibrant green of your broccoli and give it the look of being cooked without the taste of the mush. Broccoli. Have a crown.
