Using Fresh Parmesan for Neopolitan Vegetarian Lasagna

Hi! This is Josiah Owen for Expert Village and today we are going to be talking about making Neopolitan Vegetarian Lasagna. Now we are going to talk about grating our Parmesan for our Lasagna. First want to get a fresh block of Parmesan and we will need to open it. When doing this, feel free to make more than you need because you can always use the Parmesan later. We are going to cut a hunk off and I am going to grate it on the course side of our grater. Be careful because it will just fall right apart. Just go up and down. A food processor also works well but for the Parmesan, I want to get it really fine so I want to make sure and get these pieces really small so I am going to use a cheese grater. When it starts getting close to your fingers, just pull back and go a little bit slower and make sure not to cut your fingers.
