I'm Mark Alyn for Expert Village and I am going to show you how to Steak Carol. You've probably heard of Steak Diane. Steak Diane is a classic dish. It was very popular in the 50's and in the 60's and it was often table side in restaurants. It features fillet mignon. If you are a beef eater like I am and love beef, you know that fillet mignon has, well it doesn't have the best flavor. In fact it has very little flavor and also has very little fat as far as beef goes. The flavor is in the fat and so a ribeye which is much more flavorful stands up to bigger and better things by itself. What I've done is I've taken the classic Steak Diane recipe and added garlic and now call it Steak Carol after my wife. You can take the meat and it is fillet mignon, I have 4 little fillet's here as you can see and if you like, you can salt and pepper them to taste. After you have done that, you are going to go back to the stove and prepare the dish.
