Hi! I'm Terri Turco and this is Expert Village. All you do is you just really pat it down and you make it about half inch on the sides. It should all be even. As you see, you want it to be equal throughout the whole log. They call these logs, biscotti logs. The reason you want them to be even is you want them to cook uniformly through the whole biscotti. As you can see, you see all the little chunks of almond in there. If you had smellvision, you can see that this really smells of almonds. That's because of the almond extract. You're going to form it to a nice log. I'm going to put this in the oven for 350 degrees for 30 minutes. Now, as you put it in the oven, I always say put it on the a bottom rack. Not a top rack because you are going to twice bake this and you don't want it to get too dark on top because you're going to put it on its side.
