Hi! This is Josiah Owen with Expert Village, and today we'll be talking about making sweet potato and squash vegetarian lasagna. Now what you want to do is take your sweet potato and cut it down the side; inch size pieces. Almost like you're making sweet potato medallions. Then what you want to do is take that center and cut through there, and then cut it into thirds. A piece is about half an inch each. If you can, you can always stack 2 on top of each other. It'll make things a little faster. Now what you want to do is grab your zucchini and put the potatoes in there. Make sure all the pieces are even. There you go. Ready to cook.
