My name is Brandon Sarkis, on behalf of Expert Village. Today, I'm going to show you how to make a holiday turkey. Now let's do the equipment. Let's see, we're going to need a pan. Since this is a fairly small turkey, I'm just going to use a small roasting pan I've got here. Actually it isn't even a roasting pan, it's more like a brownie pan, but the turkey will fit in here just fine, because I've cooked several turkeys of that size in the pan, this exact pan, so you want to get something with some depth to it. A sheet pan wouldn't work because as the juices come out of the turkey, they'll tend to spill all over the place and make a giant mess. This way you're going to avoid a lot of your accidents. With that, we're also going to need a rack in there, because as your turkey, as the juice comes out of it, we don't want it sitting in that, we want it sitting above it. Obviously it's still going to contact it a little bit, but we just don't want it sitting there, having the bottom of the turkey soaking in it because that's just kind of nasty. Let's see, we're also going to need an oven, something that goes up to three twenty-five, which I'm pretty sure, pretty much every oven made goes up to three twenty-five, so that shouldn't be an issue. We've also got our knife. We're going to need something pretty substantial because at the end we're going to be cutting the turkey down. So something nice and sharp. Other than that, oh a cutting board. That's obviously very important for cutting our onion, as well as our turkey, and obviously, towels, like always a big favorite of mine. And also we're going to do a little bit of trust work on the bird, which means we're going to kind of tie it up a little bit, a little turkey bondage. So I've got some twin here, some butcher's twine we're going to use to trust the wings and the legs into the body, to tighten the whole thing up. So with that, let's go ahead and get started.
