Beer Battering Fried Coconut Shrimp

Hi! This is Rich Buccola of New York City and today on behalf of Expert Village, I'm going to show you how to make coconut shrimp with orange marmalade dipping sauce. This is again, where you can again get the kids involved. I remember as a kid, I would help my mom all the time in the kitchen. Actually, not all the time, but when she was making something I like. Basically, just rip off a piece of the parchment paper. You see it rolls this way. If you turn it this way, it'll actually stay on your pan. What we're going to do now is we're going to grab our shrimp. We're going to just put it our flour mixture. In our flour mixture, then it goes right into the beer batter. Why do I use a stout. Look at how thick that stout is. It makes for a better binding agent, material, or liquid. Look at that. It's so thick. Then you go right into your coconut. You get it all nice with the coconut. Then after that, you put it right here and that's it. That's it. You go from flour. This is a great time, like I said, to get the kids involved. Flour, into your dipping sauce, into your batter. Look at how thick that stout is. That stout makes it a nice thick stout. Again, go right in here. Press a little bit. If you press it nice, you'll get a lot of that coconut all of your shrimp is what you want. Look at how beautiful that looks. Again, just put it the same way with the tails going the same way. Just keep going with each one. After that, you're going to put it in your refrigerator for 30 minutes, and then it's ready for cooking. While you're doing that, you can do your orange marmalade sauce and get that ready. It's real simple. Get the kids involved. Tell them if they want to eat it, they have to help cook it. Just keep breading your coconut there. Get your shrimp all coconut up, press it nice into it. When I come back, I'll have this all ready and I'll show you how to make the orange marmalade sauce here on Expert Village.
