So we're going to begin our date night menu with preparing the salmon. Now I'm going to create a little pouch for the salmon to cook in, on this small cookie sheet. So I've got about a one and a quarter pound piece of salmon, probably a little bit big for two people, but I always like to plan more rather than less. I'm always afraid--never want a guest to feel like there isn't enough food at the party. So I'm going to drizzle it with a little bit of olive oil, and I'm going to prepare, going to do a lemon-scented salmon. So I'm very, very thinly slicing one of these little lemons here, but before I add those, I want to add the seasonings. I'm going to put a little bit of salt, and the classic herb that's always paired with salmon--at least in my experience with it--little bit of dill, and then I'm going to layer the lemon just like that. Add maybe one or two more slices there. Trim that off, we want to make it look like it's a real restaurant meal. Isn't that pretty? Then I'm going to seal up this pouch. This meal is great, because everything I'm planning on it I can put in the oven and leave, and then I can attend to my guest rather than being in the kitchen. So I'm going to bake this at 425 for roughly 25 minutes, or until the center of the salmon just flakes with a fork.
