Adding Parmesan Cheese to Oysters Rockefeller

My name is Brandon Sarkis on behalf of Expert Village. Today, I'm going to show you how to shuck an oyster and how to prepare them a couple of different ways. Next up is our Parmesan cheese. Now, if you want, you can grate this. I don't like grating stuff this small just because I have a tendency to hurt myself. So what I'm going to do is I'm going to cut it off really small and then I'm going, basically, just going to mince this as well. That's one of the good things about working with good hard cheeses, like Parmesan, is you don't have to have a grater around. Although, if you wanted, you could also do this with a peeler. Peelers work really great for shaving Parmesan. I typically don't like grating Parmesan because, typically, it just crumbles apart. I like shaved Parmesan for my salads. If I were doing this for a garnish, I would shave it as well. It just looks better, it looks classier. And also, make sure if you're using like a whole Parmesan like I'm using, make sure don't have any rind on it, because the rind does not taste good by itself. So, what I'm going to do here, I'm going to take my knife, just a little, a little, tiny, like half a matchstick, pieces of Parmesan here. If you already buy shaved Parmesan or if you already buy grated Parmesan, that'll work just fine too. But, I'm just showing you another way, if you want to buy the whole Parmesan; it's more flexible around your house. I mean you can get a big block, you can shave some off, you can cut some off, you can grate some of it. You can even take like a nutmeg grinder and get the really fine shaved Parmesan like you get out the green can. So, that being said, let's chop up our spinach real quick, and we'll move right along.
