CHEF LASZLO SZALAI: Good evening and welcome to Expert Village. I am Laszlo Szalai, the chef of Citadella Restaurant. Our restaurant is situated in Budapest, Hungary. I usually add an apple too. We cooked the potatoes in the cauldron earlier. Now, we peel them. Fortunately, they cooled down already so it is easier to peel them. Now we chop up the onion and this is one of the most important parts of our dish. We chop it up finely. After we fry the diced onion golden yellow, we mix it with the meat of the duck.
