We've taken the sandwich, our super roast beef sandwich, out of the oven and it's rested for ten minutes. Why rest? Well, for one thing, it's too hot to handle, for another, resting allows the cheese to kind of calm down and mix with all the other ingredients so it's not going to just drip right out of the sandwich. You want it to stay right where it is. You want the dressing to stay where it is and the cheese to stay where it is. You rest a lot of things after you cook them, sandwiches is one of them. Let's bring it over here, unwrap it. We wrap it so we don't get the crust too crunchy. You don't want it to shatter when you bight into it or you cut into it. Isn't that beautiful? Let me make sure you can see it. Look, all the cheese melted over everything. We're going to cut this in half, my mouth is watering, there we go, and I've taken some mixed spring lettuce and some macaroni salad, put our sandwich right there, and there it is.
