How to Sauté Mushrooms

On behalf of Expert Village, I'm Laura Banford and I'm going to teach you how to make a super sandwich. Now that we've prepared our bacon and our onions, we're moving on to our mushrooms. I'm using nice, fat, healthy looking cromini mushrooms. The cromini mushroom is like a button mushroom only it's brown. It has a little more flavor than a white mushroom, really like 'em. Mushrooms can be eaten raw but they really come out in flavor when they're cooked. They're earthy, they're nutty, there are lots of different kinds of mushrooms. So what we're going to do is we're going to saut? our mushrooms in a little bit of butter and soy sauce. First we're going to slice the mushroom. Take off the stem. You can use the stems, but we don't need them for this purpose, and just slice them like that, about a quarter of an inch thick. To our pan, we're going to add some more unsalted butter. Get that nice and bubbly. When you put butter in a pan, a hot pan, it's going to froth up. Basically the butter is ready for the ingredients to be added after the frothing subsides. You can see its frothing pretty good now. It's going to subside, and then we're going to...there it goes, it's going down a little bit, it's going down, that means it's released the little bit of water that it has and it's ready for the ingredients which in this case are our mushrooms. Delicious mushrooms. Lay them down, and toss them around make sure that...I'm going to add a little bit more butter. Mushrooms are like sponges and they soak up lots of butter. Once those get going, I'm going to add something that's going to add just a little bit of flavor, a little bit of soy sauce. That's going to make them nice and brown. It's going to coat them. You see the soy sauce bubbles up and get thick right away, a little bit syrupy. Those will go for about four more minutes, and when we come back we're going to move on to the assembly of the spread for our sandwich. See ya at the next clip.
