How to Slice an Onion for Caramelizing

On behalf of Expert Village, I'm Laura Banford and I am going to teach you how to make a super sandwich. Now that we've cooked our bacon, we are going to move on to our onion. I have a beautiful red onion here and what I am going to do is show you how to peel, slice and caramelize the onion in a saute pan. Here it goes; you take your onion on the cutting board and you want to cut off the root ends and that will make the onion easier to peel. The way I peel an onion is I cut off the root ends and now I am going to score one edge like that. Then you can go in and just peel the outer layer of the onion so that you don't have anything too hard or too bitter. Okay and you have it like this. There are a lot of different ways to cut an onion. You might want to dice them, you might want whole rings if you are going to make fried onion rings. I am going to want little onion slithers or slices so what I am going to do, is I am going to take it like this and cut it in half. That way as you see the onion is going to sit flat on my cutting board. Then I am going to go in with my sharp knife, and make slices about an eighth of an inch thick. Then we will start with the other one, slicing all the way through. Okay kind of just poke holes through them and you separate the onion rings and once they are in the pan, you don't want to have to go in there and touch them because obviously they are going to be hot.
