It is important to stir the sauce constantly while adding Parmesan Cheese because you don't want it to stick and burn to the bottom of the pot. You should have real smooth creamy consistency. You are going to take your bag of fresh baby spinach and add like two handfuls just like that and basically fill up the pot. What happens with spinach is when it cooks down, it is not going to take up as much space. Little or as much spinach you want really; between 1 and 2 handfuls of it. As you see, I am mixing in and it's already halved its bulk in the sauce. It really doesn't take very long for spinach to cook. You are essentially sauteeing the spinach in the Alfredo Sauce. At any point, before or after the spinach, you want to add some pepper. I like a lot of pepper in mu Alfredo. A good referenced point would be to start with a half a teaspoon. It is important to note that the butter you use may or may not be salted butter. You may want to add more or less salt depending on whether or not your butter was salted to begin with and stir it in.
