Cooking Onion in Ghee for a Kitchari Recipe

Hi, I'm Amanda with Expert Village in this clip I'll be cooking the onions I'm going to be turning the heat on to about a medium high heat and I'll add two tablespoons of ghee to the pan. Ghee is a clarified butter and it's a concentrated butter fat with no milk solids in it so it's nearly lactose free. I'm just going to heat it until it's clear and you can make ghee at home as well, you can buy it at the store or you can make it at home with just regular butter. Once it is clear I'll add the onions and I'll cook the onions until they're soft, ghee has a lot of medicinal properties. It is a wonderful for cooking at high temperatures where as other oils can spoil when you cook them at high temperatures. Ghee increases the digestive fire and it is highly in all your cooking. It has a sweet and minty flavor it is a very delicious touch to a recipe like this one.
