LASZLO SZALAI: Good evening and welcome to Expert Village. I'm Laszlo Szalai, the chef of Citadella restaurant. Our restaurant is situated in Budapest, Hungary. We put water in a big bowl on the fire. We add salt. We will cook our dough in it. Until we wait for the dough to start boiling, we can prepare this thickening to the stew. So we make a thickening from sour cream. We put some spoonfuls of sour cream in the bowl. We add flours to it and then with the use of the whisk we stir it until it's smooth. Important that there is not lump in it. I think it's going to be perfect.
