LASZLO SZALAI: Good evening and welcome to Expert Village. I am Laszlo Szalai, the chef of Citadella restaurant. Our restaurant is situated in Budapest, Hungary. Now we chop off the vegetables. First, the onion. It does not matter how big pieces we cut, though the smoother the better. Because during the cooking we will _____ and we bake as our sauce gets thicker. Now I am taking the paprika and the tomato. These are actually the most important ingredient of the chicken paprika. I am cutting out this end of the tomato, then I chop it up and put it in a separate bowl until cooking. We cut out the core and then we cut it up like this, into small cubes.
