How to Carve a Turkey's Left Wing

My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to carve a turkey. Alright so now we're going to take care of this whole wing side over here. So we're going to take our turkey and turn it on its side. Be careful anytime you relocate the turkey, be prepared for it to start getting all sorts of juices all over the counter because that's just the way turkey's work. So we're going to lift up this arm as such and we're going to gently slide our knife underneath it to try to work towards the inside of that wing. And you'll see a shoulder joint in there. Take your knife, stick it inside there, give it a little twist, hear it pop, tough to cut away there for a minute but there is your whole giant wing. Imagine making buffalo wings out of those, it would be pretty tasty. We're going to move on to trimming this thing out, pretty simple, just take a knife right down the middle of this part. Get rid of that the same joint, make sure you pull it apart at the joint. Don't actually break it or saw through it. This part not really worth anything on turkey, little chewy, in here, little crunchy. We're just going to take and sometimes this part of the turkey gets too dry to even bother with but this one actually looks pretty good. So we're going to take our knife and stick it in between the pieces like this. Wow this one is being difficult, there we go. And pop that apart and then you're going to scrape that right off. We've got an uncooperative turkey here. There is that. And for the upper part of the wing, it's almost like a leg. Just like it is on a buffalo wing, just like a mini leg kind of. So if you can clean a leg you can clean a wing pretty easily. I'm just taking the backside of my knife just like i did on the other ones, pushing down you've got to watch out, there is a lot of connective tissue and stuff in here really grissly parts in here, so I'm making the point of snipping those off. Now I don't want to get one of those later on in my turkey sandwich. There we go. And so this is what we are left with. If you really wanted to you could work some more off of this. Something you shouldn't do with your turkey bones is throw them in the trash, what you should do with them is take your turkey bones and turkey carcass and make turkey stock out of them. Good idea. So we're going to go ahead and pause here and flip over to the other breast.
