Cutting Vegetable For Chinese Orange Chicken & Beef

Hello my name is Hui on behalf of Expert Village I'm going to show how to cook orange chicken and orange beef. First we cut off the root from the green onion. Then we cut the rest into 2 inches in length. Then we cut them finely afterwards. You see I leave the finely part for garnishing and the rest is more for the seasoning for the sauce. For the ginger we would chop Julienne and then finely first. Change the direction and then we can chop them into really finely minced ginger. For garlic we would use the blade of our knife to crush them so that we would peel off the skin. Then we can chop them into larger one cause they are less likely to burn in the oil. Then again as I said we only need 1/2 a onion. We are going to save the other one for later. First we chop off the bottom and the top part of the onion. Then we can just peel it. We are going to take off the first layer, then we can slice the onions into wedges.
