Mix Wet & Dry Ingredients for Pumpernickel Bread
Hi! My name is Kip and I am here on behalf of Expert Village and today we are making Pumpernickel Bread, a dense rye bread. Now that we've taken a look at the dry ingredients that we will be using, we will combine those and then add our yeast mixture. There is no real special way to do this. Just take the mixing bowl that you are going to use and now you can mix this when it is time either by hand with a wooden spoon to combine it until the dough begins to lift off the edges or you can do as I do, use a nice Kitchen Aid with a dough hook. It is much easier to do the job. But you can just put your rye flour in, put your all purpose flour in, go ahead and add your salt, both your caraway and fennel seeds and your bran. There you go. The next thing that we need to do is simply add our yeast mixture and it is a good idea just to create a little pocket for that mixture to sit in especially if you are going to be mixing this and kneading it by hand. Notice that our yeast mixture has foamed up nicely and it is ready to go. So we will just take that and pour that into that pocket in the bowl, that little dip in our ingredients. Now that we've added our yeast mixture, it is time to add the mixture from our saucepan. Simply pour that down into the little pocket that we had added before and make sure that you cleaned out the bottom. Once you've done that, go ahead and add two more cups of brewed coffee and it is now time to mix all that together using our Kitchen Aid.
