Adding Tomatoes to Jambalaya

Hi, this is Karl James owner of Creolesoul Catering located in Round Rock, TX and I'm Taylor Glover and on behalf of Expert Village we are here to show you a chicken and sausage jambalaya. We let our vegetables, our holy trinity sweat down and now we are going to add our tomatoes, garlic, green onion bottoms, Serrano peppers. This is a good time for the garlic to be added in. Because one thing you don't want to do is that you don't want your garlic to brown once it starts to brown you get a bitter taste to it. What we want is that liquid to start coming out from those tomatoes, we got some already coming out from that bell pepper, onion and celery. That will help slow the cooking down on our garlic. We want that garlic to heat up and bring out that sweetness of the garlic. Now we're going to add just a little bit of tomato sauce to this, get it all mixed up around the sides here and everything down. At this step we're going to toss in a couple of bay leafs and we are going to get the flavor of those bay leafs going in this jambalaya. At the end we'll take those bay leafs out so we'll keep this mixing up and we'll see you back at the next step.
