Hi, this is Karl James owner of Creolesoul Catering located in Round Rock, TX and I'm Taylor Glover and on behalf of Expert Village we are here to show you a chicken and sausage jambalaya. Now that we have been rendering our sausage we want to add in the holy trinity that we chopped up and that is our onion, bell pepper (both red and green)as well as the celery. So we'll just dump that right in there. Scrape that off for me Taylor. We got some nice colors going on in here now and we're going to sweat this for about five minutes to bring out the sweetness of those bell peppers and onions. So what do you think? Pretty good. How does it smell? Smells great. Remember I told you the circus is visiting, clowns back there. See we want to get all of this mixed up soften those vegetables a little bit, that holy trinity which is our base for any creole dish. Once again if you substitute the celery and add carrots you have a meriqua. So holy trinity onions, bell pepper, celery, meriqua onion, bell pepper, carrot. So we'll continue to sweat these veggies down and we'll see you back at the next step.
