Cutting Tomatoes for Jambalaya

Hi, this is Karl James owner of Creolesoul Catering located in Round Rock, TX and I'm Taylor Glover and on behalf of Expert Village we are here to show you a chicken and sausage jambalaya. Now it's tomato time. We're going to have Taylor go ahead and slice and dice our tomatoes for us. We're using roma tomatoes, I like them because they're firm, we cut them in half and then what we do is we core them. We take the seeds and all the soft portion out because we don't want them mushy. We basically want them firm and stuff so you're going to slice and dice these the same way that you did you bell peppers, vertical along the side and then spin them, then make some nice little chops. I'm going to use about three tomatoes in this. If you wanted to you can use can tomatoes, it wouldn't make any difference I would suggest though if you do use a can tomatoes drain most of the liquid out of the can before hand, before using. Even though in this recipe we are going to use a little tomato sauce but we don't want it too wet. So we have Taylor making some beautiful chops here, look at me no hands. I need to have her here all the time. So she'll continue to cut our tomatoes for us with such expertise and we'll see you back at the next step.
