Preparing the Asparagus as a Side

CHEF BLONDIE: So asparagus one of my favorite vegetables. It can be done quite a few ways and one of the nicest ways to do it, that it think, is to just before you're ready to serve approximately eight to ten minutes before you're ready to serve your meal. You take a pan of water, put no more than an inch of water into your pan. I'm going to snap the asparagus to find out where the tender end is and where the woody end is. And wherever the asparagus snaps, this is where I'm going to have all the tenderness; this is what I don't want. So now that I have a guide I'm going to line my other asparagus up and we're just going to go ahead and cut them all at about the same length as the spot where I found my asparagus to be tender. So we know these are all the woody ends, these we can just discard, toss those right into the garbage. And then I like to just assure myself that they're tender all the way down so about two thirds of the way down. I just take my peeler and peel the skin off the asparagus, it's a prettier presentation, it makes it really tender all the way to the very end. You don't have to do this but I think it's nice. We're doing an elegant lamb, the smashed potatoes are sort of earthy and this just kicks it up a notch. This is a pretty simple asparagus dish but it really looks like you took a lot of extra time in preparing it. And whoever that special person is that you're preparing it for believe me will appreciate it. They'll notice all the little things that you've done. They might not say it. They might say it with a gift, maybe a ring.
