CHEF BLONDIE: And our salmon is now ready and we're going to bring our salmon out and down. Look how gorgeous that salmon is. Now you remember I told you that we're almost going to know the salmon is ready without ever having to put a thermometer in it. And you'll notice that there's white along the salmon. Mostly we don't know what that is but it's sort of like the white in an egg, it's an albumin, and when you start to see that coming up from your salmon you know your salmon is ready. It's light and fluffy. Our crab cakes are ready. They only thing were are going to do is give ourselves a beautiful malt beurre which is just a butter sauce. And I'm going to add a little bit of sherry to my pan and we'll get ready to plate. So this is just getting hot.
