CHEF BLONDIE: So, we're going to make some crab cakes. And I got some homemade bread crumbs. I've poured a little bit of bread crumb into the mix itself, just to give it a little bit of a binder. You know crab cakes you can make just about anyway you want, anything that makes you happy. I've got enough here for two nice sized crab cakes. I'm going to start to form some, I want to put a little bit of bread crumb down on my cutting board. Spread that out. Take about half of this. These are going to be pretty good sized crab cakes. Into my hand, and yes, you gotta get your hands a little dirty. I'm going to lay that into my bread crumbs. Start to put some bread crumb on the top. Gonna come into the crumbs that I've got here. Add some more across the top so I can get a nice cake. And these cake should be very rustic looking. They don't need to be perfect. If you try to pick it up like this with your hand, it would fall apart. So, what we're going to do is set it over here, 'cause we're going to take these with a spatula over to a hot pan with some oil. I'm going to get the second one done here. Real quickly, I'm going to spread my bread crumbs out with the rest of my mix in. Now, that's pretty. Let's form that up again into a cake. Put some crumbs on the top. As you can see, once I've got the crumbs on the top I'm starting to get a good formation of a cake here. But again, I'm not going to be able to pick this up with my fingers. So, let me go wash my hands real quickly.
