How to Stuff Salmon

CHEF BLONDIE: So, it is said there are many ways to skin a cat. Oops, I mean many ways to stuff a fish. And we've got two different, very different cuts of fish here, but both of them can be stuffed and I'm going to show you how, I like to make these just a little prettier. Let me take a look at my fillet and I just want to cut off the tip of this. I can always save this for something else. And let's just make sure that my other side is nice and even. And I'm going to cut a little pocket. Not all the way through but right into the center of this fish. Like this. Pull my fish back and out. Pull my flesh under and open this up. Now, I'm going to begin to stuff it. And don't be afraid if your stuffing comes up and out the top, it's really stuffed high. That's fine. We want that flavor in there. We trim a little bit of this other end off. So let me have a perfectly even piece of fillet. There is one. Okay now, you're probably wondering what the heck can we do with this to make this interesting and this pretty. Tighten my tail up here. And take and make a slit right up the center. And we're going to create a little pocket. Stuffed under. And inside this pocket is where our stuffing is going to go. So, don't ever think that when the tail meat is there that you've got nothing you can do with it. You just created a whole new place for our stuffing. And then we're going to saute.
