My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to make really good, easy, quick meals using swordfish. Alright the next thing we're going to do is a pan grilled swordfish, or you could also do it over an open grill, but I'm doing it pan grilled. Pan grilled swordfish with a fresh fruit salsa. So what I'm going to do is, got my swordfish here, one Serrano pepper, one half an onion, one really big orange, got a tomato, have a pear, and I have just a little bit of olive oil back here which we're going to us to brush the swordfish. From an equipment standpoint, you're going to need a brush, a pair of tongs, a knife, couple of containers that you can put stuff into as you cut it unless you want to put it all into the bowl as you cut it, and I'm using a grill pan like this. It's a big cast iron thing. I'd recommend getting one of these because they're pretty invaluable. I love having mine. Also this way I don't have to fire up the grill, especially when it's raining I can grill inside, as long I'm not grilling for too many people. On that note, let's get started.
