History of Spaghetti Bolognese

Hello, my name is Graziano from restaurant Krizia in Budapest Hungary, on behalf of Expert Village. I'm going to teach you how to make Italian food. My name is Graziano and this is my friend from the Italian Academy, Mr. Alberto Tibaldi. We are talking about the dish we just made for Expert Village. Bolognese, I don't know Spaghetti Bolognese we don't have in Italy. It is very popular in the world, but spaghetti is coming from Napoli and Bolognese is also coming from Bolgna. "Spaghetti es una pasta del Sur de Italia". It's in South Italy, it comes from South Italy. In Bologna we have Italia tele, we have fettuccine. The big difference of South and North Italy in the pasta is, in the South Italy they use the durum pasta, the durum wheat with only water, like spaghetti, macaroni, penne, whatever. And in North Italy we use the pasta with normal flour and egg. This is the big substantial difference of the two kind of pasta. Now all mixing so we use also in North Italy durum and in South Italy they use egg, but the substantial difference. Usually in North Italy we stuff all the pasta, like cannelloni, tortoloni, tortellini, cappelletti, tortelli, so it's all stuffed usually. And in South Italy they don't stuff, they use to make with pomodoris very simple and very good. You also need pomodoro, vegetable, fish, clams, whatever.
