On behalf of Expert Village I'm Terry and today I'm going to give you tips on smoking a beef brisket. Okay the brisket has been cooking for 4 hours actually smoking it for about 4 hours close to 200 degrees. So what I'm going to do now is flip it over and baste it on the other side towards the sauce. Or mop as they say. Be careful to keep the smoke out of your eyes cause it does burn. Just like as I say that it goes in my eye. You need to keep a eye on your water because as the fire gets hot your water would boil dry and the grease that falls in the water will start to burn and it will effect the flavor of your meat. Which would not be very good. I use distilled water because if you use water out of the tap you have the high sodium deposits. If you leave in areas where there is hard water. Replace the lid and let it cook for another four hours. I will check again after 4 hours with a thermometer.
