Work Rye Bread Dough
My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to make rye bread. Alright, this has been going for about two or three minutes and you'll see I've got some flour stuck on the sides of the bowl on the inside. So, I'm going to shut my speed off here. I'm going to make sure I scrape all the way down and get all my flour back into my dough because it doesn't do us any good on the sides of the bowl. And once I get that mixed in there which it's pretty well mixed in. So now I'm going to add my white flour, the unbleached stuff, about a half a portion at a time. That's about half right there, pull this up. I'm going to cover this for just a moment so I don't get a big flour dust cloud in my face. Turn this on for a second. You'll see what's happening. It will start tearing up the dough here in the middle and as it does that it will start pulling the white flour, the unbleached flour into that mixture. If you notice I haven't added the salt yet. We're going to add the salt last because as soon as you add the salt it's going to stop the yeast from rising. It's basically going to kill your yeast. So I'm going to wait until I get this mixture all mixed up nice and I'm going to add the salt with the rest of the flour here in a minute. So let this go for a few minutes.
