So I am just finishing up cutting the second pepper into its long strips. Oh something I forgot to say this cutting board that I am using is ego friendly and it is made of bamboo. Bamboo is a very renewable resource. It is actually a grass; it's not even a tree. It works really well for things like cutting boards. Actually the floors at my house is made of bamboo. I've seen bamboo utensils instead of having plastic utensils. Bamboo plates and that type of stuff. So bamboo very good. I just got this at Target. Not expensive, good thing to do. The last thing that I am cutting is the red onion. You want to get off that bottom so that it is nice and flat feet as sliced and then just kind of slice it in half. This one you are going to do in about, oh, I've got to get the skin off of here too. You are going to do this one in about half inch circles here. Okay, and then just kind of separate them a little bit. Spread them out all over your roasting pan. Okay, we'll do that for the other side as well. Get off this little stem here. Take off all the skin. No one wants the skin in there and their roasted vegetables. Red onions are such good flavor. Especially when they are roasted, onions get a little sweeter and so it is not as pungent as if you are sitting there eating a raw onion. It adds such good flavor. Again, I will just spread these all over. Got to break them up today to cook evenly. You want everything to cook evenly. These are really caramelized in the oven. They get such a great color and they kind of wilt down a little bit. It's amazing. And there is actually one other vegetable that we are going to be adding to this. It's in the refrigerator. It is kind of a secret ingredient. Let me get it for you. There you go. This is fennel. Fennel is awesome. It has a taste that is almost liquoricy which I love liquorice. However, I know a lot of people don't like liquorice but the thing is when it is all cooked, you don't take that liquoricy flavor. It is real interesting. It is a real dynamic flavor. I know that my sister does not like liquorice at all but she had something recently with Fennel in it and she loved it. So don't let that flavor scare you. Okay so again I am just kind of slicing the bulb into about half inches as well and then, breaking it up over our roasted vegetables. Okay. There you go. All the veggies are ready. They are all cut up.
